Vegan Halloween Confetti Cookies

Treat #1 of 3 Halloween treats featured in my Minimalist Halloween Series video.


Prep Time: 10 minutes

Cook Time: 10 to 12 minutes

Total Time: 20 to 22 minutes (plus additional cooling time)

Yield: 12 to 14 cookies

INGREDIENTS

  • 1 flax seed egg (1 tbsp. flaxseed meal + 2 1/2 tbsp. water)

  • 1/2 cup melted coconut oil

  • 1/3 cup granulated sugar

  • 1/3 cup brown sugar

  • 2 tsp. vanilla extract

  • 1 1/4 cup unbleached all-purpose flour (substitute whole wheat or gluten-free flour)

  • 1/2 tsp. baking soda

  • 1/4 tsp. sea salt

  • 2 tbsp. vegan Halloween sprinkles (I used nonpareils but use whatever you like!)

DIRECTIONS

  1. Preheat oven to 350º Fahrenheit.

  2. Make the flaxseed egg by mixing 1 tbsp. or flaxseed meal with 2 1/2 tbsp. of water. Set aside.

  3. Add the coconut oil to a large mixing bowl. Add in both sugars and the vanilla extract and mix till combined. Once the flaxseed egg becomes gelatinous, add it in and thoroughly mix.

  4. In a separate small bowl, mix together the flour, baking soda, and sea salt.

  5. Add the dry ingredients into the wet ingredients and mix till it almost forms a complete dough.

  6. Add in the sprinkles and fold into the dough just till everything is combined and the sprinkles are distributed evenly throughout.

  7. Using a spoon or a cookie scoop, roll about 1 to 1 1/2 tbsp. of cookie dough on the palm of your hands and flatten to create your cookie. Now place each one on a greased or lined baking sheet.

  8. Bake for 10 to 12 minutes. It should be a little soft. Let set and cool for 10 minutes before serving.
