Yield: 12 to 14 cookies
INGREDIENTS
1 flax seed egg (1 tbsp. flaxseed meal + 2 1/2 tbsp. water)
1/2 cup melted coconut oil
1/3 cup granulated sugar
1/3 cup brown sugar
2 tsp. vanilla extract
1 1/4 cup unbleached all-purpose flour (substitute whole wheat or gluten-free flour)
1/2 tsp. baking soda
1/4 tsp. sea salt
2 tbsp. vegan Halloween sprinkles (I used nonpareils but use whatever you like!)
DIRECTIONS
Preheat oven to 350º Fahrenheit.
Make the flaxseed egg by mixing 1 tbsp. or flaxseed meal with 2 1/2 tbsp. of water. Set aside.
Add the coconut oil to a large mixing bowl. Add in both sugars and the vanilla extract and mix till combined. Once the flaxseed egg becomes gelatinous, add it in and thoroughly mix.
In a separate small bowl, mix together the flour, baking soda, and sea salt.
Add the dry ingredients into the wet ingredients and mix till it almost forms a complete dough.
Add in the sprinkles and fold into the dough just till everything is combined and the sprinkles are distributed evenly throughout.
Using a spoon or a cookie scoop, roll about 1 to 1 1/2 tbsp. of cookie dough on the palm of your hands and flatten to create your cookie. Now place each one on a greased or lined baking sheet.
Bake for 10 to 12 minutes. It should be a little soft. Let set and cool for 10 minutes before serving.
